Healing Paleo Chicken Soup

Free range organic chicken thighs 4-5 pounds

1 white onion, peeled and diced

8 cloves of garlic, crushed 

2 stalks celery, diced

4 large carrots, peeled and diced

1 cup cauliflower, diced

2 golden beets, diced

2-3 springs fresh Parsley

3-4in piece of Fresh ginger root, halved length wise

1-2 tablespoons sea salt

6 cups bone broth

Reserving half of the parsley for garnish, place all ingredients into a crockpot and cook on low for 6-8 hours. If you have time, sauté the veggies and brown the chicken prior to adding into the crockpot for added flavor. Once cooking time is complete, remove ginger, top with remaining parsley, serve and enjoy!
