Healing Paleo Chicken Soup

Free range organic chicken thighs 4-5 pounds

1 white onion, peeled and diced

8 cloves of garlic, crushed 

2 stalks celery, diced

4 large carrots, peeled and diced

1 cup cauliflower, diced

2 golden beets, diced

2-3 springs fresh Parsley

3-4in piece of Fresh ginger root, halved length wise

1-2 tablespoons sea salt

6 cups bone broth

Reserving half of the parsley for garnish, place all ingredients into a crockpot and cook on low for 6-8 hours. Remove ginger, top with remaining parsley, serve and enjoy!
