Sweet Potato (Bean Free) Chili

Try this crockpot chili that is high protein, packed with veggies, and is perfect for an easy week night dinner or meal prep for the week!

You will need:

3lbs Ground Meat of Choice (I used venison, but you could use beef, bison, turkey or elk)

Veggies of choice; Options include:

1-2 sliced zucchinis, 1-2 chopped carrots, 1 onion, 1-2 chopped bell peppers, 1-2 yellow squash (if using all, just do 1 of each)

Cubed sweet potato (this replaces the beans and has a delicious similar bean texture when cooked)

(1) 6oz can of tomato paste

(1) 14.5 can of tomato sauce

(1) 28oz can of diced tomatoes

1 tablespoon cumin

2 tablespoons chili powder

2 teaspoons garlic powder

Salt & Black Pepper to taste

  1. Brown the ground meat until cooked through. Drain excess oil.

  2. Add browned meat and all other ingredients into the crockpot. Stir until mixed through.

  3. Set crockpot to low cook mode and cook for 6-8 hours.

  4. Enjoy!
