You will need:

1 cup packed iceberg lettuce or leafy green of choice

1/2 cucumber

1/2 red bell pepper

3-4 cherry tomatoes

1/2 avocado

2 cooked chicken thighs

olive oil & balsamic vinegar

garlic, salt & pepper

Optional other toppings: red onion, pepperoncinis, olive, feta cheese, pepitas

Chop everything and toss together! It really is that simple. You can meal prep individual servings ahead of time, just add the olive oil and balsamic right before serving.
