Paleo Banana Protein Loaf

Elevate your day with a little slice of heaven! This Paleo Banana Protein Loaf is soft, perfectly sweet, and made with clean, wholesome ingredients you can feel good about. Naturally sweetened with ripe bananas and free from grains, dairy, and refined sugar, it's a guilt-free indulgence that fuels your sweet tooth the paleo-approved way. It’s light, fluffy, and oh so dreamy. Perfect with a cup of coffee or as a post-workout bite—your taste buds (and body) will thank you. I recommend making 2 loaves - it’s that good!
You’ll need:
2 Eggs
1 Ripe Banana
2 Hefty Spoonfuls of Nut Butter (I like cashew butter or almond butter)
A Splash of Unsweetened Almond Milk
1 Scoop of your favorite protein powder (I like the unflavored Lineage AB Complete)
6 Tbsp Almond Flour
1 tsp Baking Powder
Sprinkle of Salt
Optional: Maple Syrup to taste and Cinnamon for topping
Blend eggs, banana, nut butter, almond milk and maple syrup (if using) in a blender until smooth. Pour into a large bowl, and then stir in dry ingredients.
Pour the mixture into a parchment paper lined loaf pan, top with optional cinnamon, and bake at 350F for ~40 minutes- checking for doneness towards the end. Alternatively, you could make these as muffins in lined muffin tins for 15-18 min.
