Italian Sub Salad

All the bold, zesty flavors of an Italian sub—without the bread! This Italian Sub Salad is a crave-worthy, low-carb twist on the classic deli favorite. Packed with crisp cucumbers, savory deli meats, tangy pickles, olives, red onion, and a punchy homemade dressing, it’s everything you love in a sub, made fresh and clean. Perfect for a satisfying lunch or a quick weeknight dinner!

Makes 4 Servings

For the Salad You’ll Need:

1 Whole Cucumber

Deli Meats of Choice: Some options include Pepperoni, Salami, Ham, Turkey, Chicken (use a combination of your favorites or use them all for higher protein!)

Black Olives to Taste

1 Slice Provolone (per salad)

Red Onion to taste

1 Whole Pickle or 4 Spears (1 per salad)

Pepperoncinis (check the ingredients, most popular brands contain Yellow #5- yuck!)

For the Dressing:

4 Tbsp Olive Oil

4 Red Wine Vinegar

Garlic Powder, Salt & Pepper to taste

Chop salad ingredients and disperse evenly between 4 bowls or meal prep containers. Shake dressing ingredients in a tightly sealed jar. Pour dressing over just before serving, and enjoy!
