Grain Free Almond Spice Muffins

Grain Free Spiced Muffins
Ingredients (makes 10–12 muffins)
- 2 ½ cups fine almond flour 
- ½ tsp baking soda 
- ½ tsp sea salt 
- 1 tsp cinnamon 
- ½ tsp pumpkin or apple-pie spice (or more to taste) 
- 3 large eggs 
- ¼ cup melted coconut oil or ghee 
- ⅓ cup pure maple syrup (adjust to taste) 
- 1 tsp vanilla extract 
Method
- Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners. 
- In a large bowl, whisk almond flour, baking soda, salt, cinnamon and pie spice. 
- In another bowl, whisk eggs, melted oil, maple syrup and vanilla until smooth. 
- Stir wet ingredients into dry until just combined. 
- Divide batter evenly between muffin cups, filling about ¾ full. 
- Bake 18–22 minutes, until golden and a toothpick comes out clean. 
- Cool before eating so they set up nicely. 
Variations
- Apple Glow: Fold in ½ cup finely diced apple. 
- Nutty Crunch: Add ½ cup chopped pecans or walnuts. 
- Extra Shine: Sprinkle hemp seeds or chia seeds on top before baking for omega-3s.
