Grain Free Almond Spice Muffins

Grain Free Spiced Muffins

Ingredients (makes 10–12 muffins)

  • 2 ½ cups fine almond flour

  • ½ tsp baking soda

  • ½ tsp sea salt

  • 1 tsp cinnamon

  • ½ tsp pumpkin or apple-pie spice (or more to taste)

  • 3 large eggs

  • ¼ cup melted coconut oil or ghee

  • ⅓ cup pure maple syrup (adjust to taste)

  • 1 tsp vanilla extract

Method

  1. Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners.

  2. In a large bowl, whisk almond flour, baking soda, salt, cinnamon and pie spice.

  3. In another bowl, whisk eggs, melted oil, maple syrup and vanilla until smooth.

  4. Stir wet ingredients into dry until just combined.

  5. Divide batter evenly between muffin cups, filling about ¾ full.

  6. Bake 18–22 minutes, until golden and a toothpick comes out clean.

  7. Cool before eating so they set up nicely.

Variations

  • Apple Glow: Fold in ½ cup finely diced apple.

  • Nutty Crunch: Add ½ cup chopped pecans or walnuts.

  • Extra Shine: Sprinkle hemp seeds or chia seeds on top before baking for omega-3s.
