You Will Need (makes 4–5 servings):

2 lbs grass-fed ground beef (or meat of choice)

1 packet Siete taco seasoning (or make your own!)

3–4 cups diced potatoes (white, gold, or sweet)

1 tsp garlic powder

1 tsp paprika

Sea salt & black pepper to taste

Olive oil or avocado oil for roasting

  • Toppings:

    • Fresh pico de gallo

    • Guacamole or sliced avocado

    • Fresh lime wedges

  1. Roast the Potatoes: Preheat oven to 425°F. Toss diced potatoes in oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.

  2. Cook the Beef: While the potatoes roast, brown the ground beef in a skillet over medium heat. Once cooked through, stir in the taco seasoning and a splash of water. Simmer for 3–5 minutes.

  3. Assemble Bowls: Divide roasted potatoes and seasoned beef into meal prep containers or bowls.

  4. Top + Serve: Add a scoop of pico, a dollop of guac, and a generous squeeze of lime. Serve immediately or store in the fridge for easy grab-and-go meals.

Feeling extra? Add shredded lettuce, sliced jalapeños, or a drizzle of hot sauce for extra flair.
