These Mediterranean Turkey Glow Bowls bring the fresh, vibrant flavors of the Mediterranean straight to your weekly meal prep. With juicy herbed ground turkey, fluffy white rice, and crunchy cucumbers all topped with briny Kalamata olives and fresh parsley, it’s a nourishing combo that fuels your body and keeps your tastebuds happy. Balanced, anti-inflammatory, and ridiculously easy to batch—this is the kind of meal prep you’ll actually look forward to eating.

You Will Need (makes 4 servings, double if making as Meal Prep):

1 lb ground turkey

1 tsp sea salt

½ tsp garlic powder

½ tsp black pepper

1 tsp dried oregano

2 cups cooked white rice

½ cup sliced Kalamata olives

1 cup diced cucumber

¼ cup fresh parsley, chopped

  1. Prepare the rice and set aside.

  2. Cook the Turkey: In a skillet over medium heat, cook the ground turkey with salt, garlic powder, pepper, and oregano until fully cooked and lightly browned.

  3. Prep the Base: Divide cooked white rice between 4 meal prep containers.

  4. Layer It Up: Top each with a portion of seasoned turkey.

  5. Add Freshness: Add sliced olives, diced cucumber, and a sprinkle of fresh parsley to each bowl.
